I can make several versions of a curry, a good chilli and a good beef stew. Looking to broaden my horizons. Ideally looking for something where I can get the ingredients from an average supermarket, prep it in <30 mins and then less than an hour of cooking. Got a wok, grill, oven, stew pot, frying pan etc. No slow cooker

Anything stir fried is only minutes of cooking (the prep time is the killer - prep absolutely everything before you put the wok on). Thai curry would be the same. But anything you want the flavours to develop, stew, curry, ragu etc, I’d bank on a couple of hrs cooking, so the best use of time is to allow them to cook out the evening before eating. Genuinely worth the effort. But for quick and healthy, the simple answer is eat more fish. My favourite quick fish meal is a piece of grilled fish with jewelled couscous that I think was a Jamie Oliver recipe. Less than half an hour from fridge to plate, healthy, nutritious and tasty.
Thai curry is really quick if you like spicy stuff. Just make sure you get good curry paste. Coconut milk is the only vaguely pricey ingredient. If you slice the chicken thinly or just go for a veg curry you can get it done in 15-20 minutes, Edit - just seen you already do curries!
Hunters chicken is an easy meal to make. Wrap chicken breast in a bacon slice and cover with cheddar. bake for 20 minutes then cover with lashing of BBQ sauce and bake for a further 10 minutes. Lovely.
1 packet sausage casserole mix .add whatever sausage ya like. 1 tin baked beans...with either Mash or jkt tatties. reight good
Have a look at the "Chinese Takeaway cookbook" by Kwoklyn Wan (Gok's brother) - he also has a show on Amazon Prime (I think). Really, really tasty food with simple recipes and can be done in 30 minutes - most of the ingredients are available from supermarkets (if not all).
Carbonara is really quick as apart from frying off the bacon and boiling the pasta, it doesn't need any cooking. Just a case of chucking everything together. Not the healthiest option, but proper comfort food.
On a budget Jack Monroes tin can cookbook is great. With the seasons changing.get a slow cooker and a slow cooker recipe book. Can’t go wrong.
Not quite what you after as it takes about 2 hours to prep and cook, but I cook a chinese stew called 'Braised pork with potatoes'. You can buy it online or at an asian supermarket, and I have seen it in Sainsburys.
Same goes for a spaghetti Bolongese. At its most basic chop and onion and fry with mince beef (fresh or frozen it doesnt matter) till all browned. tip in a bottle of Ragu/Dolmio or my favourite Barilla pasta sauce cover and simmer for around 10 mins whilst you cook the spaghetti You can make it more intersting by adding peppers/chillies/Mushrooms and also vary it depending on which pasta sauce you use
Another could be pulled pork. Chop an onion, put in slow cooker. Put a pork or gammon joint on top. Rub with cinnamon if you fancy it(not essential) Cover with a bottle of BBQ sauce, or spicy sauce. (Can usually get some exotic ones from Fulton foods for 50p) Cook until it falls apart. Usually a few hours. Serve with jacket/salad/chips/mash
