One thing you're missing there, players are not 'normal' commodities and have feelings/opinions. If a club offers 'market value' and the player says he wants to go then it's difficult to get true value for him.
His upward trajectory is heading towards 8 figures. It's a seller's market with this type of player. I expect a bidding war to break out by end of season, if he keeps on the way he's playing. Robbo will not have gone un-noticed either, but we can't afford to lose both.
Players sign contracts. A club attempting to buy a player only dictates the value if the current club has a desire to sell. To look at it another way, if I put something for sale on eBay then the value of that item is whatever the highest bid is. That is because I desire to sell the item and so it's value will be dictated by what somebody is willing to pay. If on the other hand somebody sees my listing, notices that in the background of one of my photos is a particularly nice rare lamp and contacts me asking to buy it then it's value is dictated by me, the owner. This is because I have no intention of selling the lamp and so it is completely up to me what price I let it go for if any. The price that somebody is randomly offering me for something to which I own doesn't dictate that I sell it for that price. The fact that players have opinions is, in my opinion irrelevant, they also had feelings and opinions when they signed a contract tying themselves to an employer in return for a large pay heck every week. While ever we (football fans in general) accept this 'but the poor lamb wants to break his contract so we should let him' attitude costs will only go up. PS, this is not a post attempting to slag off Alfie. I haven't seen one shred of evidence to suggest he wants to force a move away.
I absolutely get what you're saying but we both know that's not reality. Players refuse to play, disrupt the camp etc to get their way. Also, you're not accounting for the clubs financial position, if you've got a massive credit card bill and someone offers you £50 for lamp you might accept knowing it's probably worth £100.
