    I'd recommend it as a tasty lunch option every few weeks. Must say, while shielding, the two things we probably eat way more of now are eggs and some form of beans.

    We probably have an omelette every other week. Since we discovered the smoked haddock one, we unfairly call our other one "crappy" omelette, even though it isn't at all, but just that we bung a variety of things in there.

    I do fried egg for our weekly fried breakfast, have scrambled egg or poached eggs on toast a few times fir breakfast and then omelette at least once a week for lunch. I think lockdown is getting to me, discussing egg options on the forum!!

    We have scrambled eggs on sourdough quite a bit at weekends for breakfast/brunch. We make "posh" (that was the recipe name, they really aren't) baked beans now and then with a poached egg on top. Steak nicoise salad with borlotti beans and soft boiled eggs with runny yolks and then the two omelette options.

    That sounds really nice. Talking of smoked fish, I randomly decided to try making kedgeree the other week. I changed the recipe slightly as I thought coriander would set it off much better than parsley (I believe I was right!), and it was absolutely tremendous. Don't know why I hadn't made it before, so simple.

    i love kedgeree, and agree on the coriander instead of parsley, great to make a lot and have leftovers for lunch or even breakfast.
